Feature // Staycations in Phoenix 2018 : Kimpton Hotel Palomar Phoenix
Last weekend we stayed in the heart of downtown Phoenix at the best, urban hotel, Kimpton Hotel Palomar Phoenix. We were greeted with skyscraper views from the 10th floor, a perfect view of my favorite downtown Phoenix mural- Nevercrew’s bear mural (a new, Phoenician street art staple), delicious macarons, and champagne!
We wandered upstairs to Lustre to have a few drinks and enjoy views of Talking Stick Resort. We’ve visited the rooftop pool a hundred times over, and the views never get old.
On weekends, The Palomar features a special wine hour from 1-6pm offering complimentary wines and flatbread for guests. We passed by to try white and red wines before our dinner reservation at Blue Hound Kitchen and Cocktails!
That night, we tried an array of appetizers that truly ran the gamut of complimentary flavors. Starting with the seared tuna and fried chickpeas, the freshness of the tuna paired with the crunch of the chickpeas was a surprising take on traditional seared tuna. Next we tried the burrata- the cheese melted in my mouth and I couldn’t get enough of the bed of berry salad and locally sourced bread. Finally, we had the chicken bites – simply, addictive – and the rock shrimp roll. Move over lobster rolls, because this rock shrimp roll can definitely replace you! All of this, while enjoying the views of the sun setting on CityScape right at our window.
We finished the night with delectable dessert: a date cake with salted caramel and ice cream as well as a triple chocolate bar. Even though we were full, we still finished every last bite of that dessert! Cheers to the best urban staycation in Phoenix!
